Sweet Fondues: Summer Fondues Part 3

The final part of our summer fondue series introduces a selection of fondues for those looking something a bit sweeter.
These recipes can work really well as standalone dishes as well as deserts courses for larger meals.
Sweet fondues are much less common than the savoury varieties but can provide an enjoyable sweet course for a garden party or can even be used for children’s parties providing that the alcohol is left out.

Sweet Fondues- Tips and Techniques
Before diving into making your fondue it’s worth bearing a few things in mind;
Fondue pans need to have a thick base, be flame proof and generally made from either metal or pottery.
It is important to continually stir the fondue while heating and make sure that you never let it boil
A little blended cornflour will help thicken a fondue.
If the fondue is too thick carefully blend in a little dry wine.
Dippers for Sweet Fondues can be a selection of biscuits, plain cake, sponge fingers, macaroons, marshmallows fresh fruit pieces or dried fruit.
Chocolate Fondue
Serves 4

Ingredients
225g/ 8oz plain chocolate
150ml/ ¼ pint of fresh double cream
2 tablespoons of Kirsch
Method
Grate the chocolate and place in the pan with the cream
Heat gently, while continuously stirring until all of the chocolate has melted- make sure not to boil
Stir in the Kirsch and serve hot
Chocolate and Orange Fondue
Serves 4

Method
Follow the recipe for Chocolate Fondue but replace the Kirsch with Grand Marnier and add the grated ring of one orange.
Banana Fondue
Serves 4
Ingredients
6 bananas
2 tablespoons of sugar
50g/ 2oz of plain chocolate
150ml/ ¼ pint of fresh double cream
Method
Sieve or liquidise the bananas with the sugar
Place in to your pan and heat gently while stirring continuously and taking care not to boil
Grate the chocolate and stir into the bananas together the cream.
Mocha Fondue
Serves 4

Ingredients
225g/ 8oz of milk chocolate
1 tablespoon of instant coffee powder
150ml/ ¼ pint of fresh double cream
2 tablespoons of Crème de Cacao or Tia Maria liqueur
Method
Grate the chocolate and mix with the instant coffee
Place the cream in to your pan; add the chocolate and coffee and heat gently, stirring continuously, until all of the chocolate has melted- make sure not to boil
Add your liqueur of choice and serve hot :)
Cherry Fondue
Serves 4
Ingredients
2 x 400g/ 14oz cans of cherry pie filling
2 tablespoons of sweet white wine
3 tablespoons of fresh double cream
2 tablespoons of Cherry Brandy
Method
Place the cherry pie filling and wine into your pan and heat gently while stirring continually and taking care not to boil
Stir in the cream and Cherry Brandy and serve hot
